Albacora, the Portuguese name for yellowfin tuna, is a species caught in Azorean waters. Here it is roasted with potatoes in a sauce of tomato, white wine and red pepper paste.
Local sources name oven-roasted albacora as one of the traditional fish dishes of Flores.
Method
Heat the oven to 180 °C. Peel the potatoes and cut them into large chunks.
Heat the oil in a wide frying pan and brown the tuna steaks on both sides, without seasoning them. Move them to a roasting tin.
In the same oil, cook the onion and garlic until the onion is soft.
Add the chopped tomatoes, tomato purée, pepper paste, chilli paste, paprika, cumin and parsley. Let the sauce cook down for a few minutes.
Pour in some of the wine, season with salt and let it bubble briefly.
Arrange the potatoes around the fish and pour the sauce over everything.
Roast for about 45 minutes, until the potatoes are tender. Baste now and then and, if it dries out, add the rest of the wine or a little water. Check the seasoning before serving.
Tips
- If you cannot get yellowfin, use another fresh tuna or bonito, cut into thick steaks so they do not dry out.
- Chilli paste is hot: use less if you prefer a milder sauce.
- Baste the fish with the pan juices now and then, and add a little wine or water whenever the tray starts to dry.
